I love a good roasted Brussels sprout and this salad packs a tasty punch! Lemony wheat berries and gently browned Brussels sprouts combine to make a hearty side dish that is high
in fiber, vitamin C, vitamin K, and flavor! Wheat berries can often be located in the ‘health food’ section of the grocery store, sold dried and bagged. Keep a look out for them; they are such a great grain to be used in soups and salads, just like this one!
1 cup dried wheat berries
3 cup vegetable broth
1 lb Brussels sprouts, trimmed and quartered
1 large shallot, shopped
2 Tbsp extra virgin olive oil
¼ cup walnut pieces
1 Tbsp lemon juice (or more for extra flavor)
Zest from 1 lemon
Salt and pepper, to taste
