Delicata Squash with Tahini Sauce

Are you looking for a new Thanksgiving side dish? Well, this Delicata Squash Bake with Tahini Sauce is super tasty and will fit in perfectly with all of your traditional favorites. Even better, this side dish can be prepared in 30 minutes and you don’t need to fuss with the skin of the squash; once it’s roasted, it’s perfectly tender!

INGREDIENTS

 

For the Squash

2 delicata squash (halved lengthwise, seeds removed, cut into 1/2-inch slices)

2 Tbsp coconut oil (melted)

1 pinch sea salt

 

For the Dressing

3 Tbsp tahini

½ lemon, juiced (~1 Tbsp)

1 Tbsp maple syrup

 

Toppings

¼ cup pomegranate seeds

¼ cup dry roasted hazelnuts (loosely chopped)

¼ cup fresh parsley (chopped)
