Healthy Mini Meatloaf

Here is a quick weeknight meal that you can have on the table in 30 minutes from start to finish. It also freezes well so you could double the batch and freeze so you are cooking once and eating twice.  Pair with your favorite veggie or salad.


Servings: 6 (2 mini loaves per serving)



1 lb lean ground meat (turkey, beef, or chicken)

1 small zucchini grated (could be optional)

1/2 cup finely chopped onion (use frozen chopped onion for a short cut)

1 egg

1/2 cup whole wheat breadcrumbs

1/2 tsp salt

1/2 tsp pepper

6 Tbsp ketchup, divided



1.  Preheat oven to 400°F

2.  Spray standard 12 muffin pan with cooking spray

3.  Mix all ingredients and 2 tablespoons of ketchup

4.  Press ingredients into each cup and place a small dollop of ketchup on each meatloaf with remaining ketchup.

5.  Bake for 20-25 minutes


To freeze, cool to room temperature and wrap individually in plastic wrap and place in a plastic bag. To reheat, remove from plastic wrap and bake on a foil-covered pan for 20 min at 350°F.
