Cinco de Mayo

 

Are you celebrating Cinco de Mayo on May 5th?  If so what's on the menu?  Margarita? Corona?  Chips and Salsa?  I thought I would share one of my favorite recipes that can be served as a dip, salsa, or salad.  Bonus is that it includes beans, vegetables, and avocado so it's loaded with fiber and healthy fat.  Read below for my Cowboy Caviar recipe, but first, what are the health benefits of an avocado?

 

1.  Did you know they contain more potassium than bananas?

2.  Loaded with heart healthy monounsaturated fats?

3.  They are loaded with fiber (~7 grams)

4.  They can lower cholesterol and triglyceride levels

 

Avocados are also versatile and can be added to recipes to give it a creamy texture such as smoothies, puddings, and can be substituted for butter in recipes.  Just trade 1 Tbsp of butter for 1/2 Tbsp of avocado in brownies, cupcakes, etc.  

 

Cowboy Caviar

2- 14 oz cans black eyed peas or white beans, drained and rinsed

1 - 14 oz can black beans, drained and rinsed

1 1/2 cups corn, fresh or frozen

1 1/2 cups chopped tomatoes

1 pepper

1/2 small red onion chopped

1/2 cup chopped cilantro

1 jalapeno, finely chopped

2 avocados

 

Dressing

1/3 cup olive oil

3 Tbs red wine vinegar

1 tsp salt

1 tsp dried oregano

1/2 tsp dried basil

1 tsp honey

1/8 tsp red pepper flakes

Black pepper to taste

 

In a large bowl combine all of the "caviar " ingredients except the avocado.  Wait to dice the avocado until you are ready to serve the dip so it doesn't turn brown.

 

In a cup , whisk together the dressing ingredients.  Drizzle dressing over the caviar and toss until mixed well.
