This simple and healthy no bake energy bite is perfect for a delicious snack, breakfast, or even dessert.
1 cup oatmeal, dry
⅓ cup honey or agave nectar
½ cup natural peanut butter or almond butter
½ cup mini chocolate chips, semisweet (optional)
1 tsp. vanilla extract
1 Tbsp. chia seeds
½ cup flax seed, ground
Stir ingredients together until they are combined. Place in refrigerator for 10–20 minutes so that it will harden slightly. (This will help make it easier to roll into balls.) Once the mixture has cooled slightly, shape into 1 inch balls. Optional: Press mixture into a baking dish lined with parchment paper and cut into energy bars instead.
Store in refrigerator.
