1/2 red bell pepper, minced
1/2 red onion, minced
2 cloves garlic, minced or pressed
1/2 (15 oz.) can sweet corn, drained
1/2 (15 oz.) can black beans, drained and rinsed
3 ripe avocados, peeled, pitted and sliced
2 Tbsp. fresh lime juice
1/4 tsp. salt
1 pinch ground black pepper, to taste
1/2 cup chopped fresh cilantro, or more to taste (optional)
1. Stir in red bell pepper, red onion, garlic, sweet corn, black beans, and avocado slices together in a large bowl.
2. Mix lime juice, salt, black pepper, and cilantro into avocado mixture until desired texture is achieved.
3. Serve with fresh veggies, tortilla chips, or whole grain crackers.
