Thai Chicken Meatballs

 

 

These meatballs are a nice change from the traditional spaghetti and meatballs.  They are bursting with fresh Asian flavors and are perfect for a quick, easy lunch or dinner, or even appetizer.  Enjoy them warm or cold!  I made these for a weeknight dinner and served them with toothpicks and a side of broccoli and brown rice.  My kids loved them and that's a success in my book!

 

Ingredients:

1 pound ground chicken

2 cloves garlic, minced

2 tsp fresh ginger, grated

2 Tbsp sweet thai chili sauce

1 egg

1/2 cup breadcrumbs

1/3 cup green onions, thinly sliced

sriracha, optional

 

Instructions:

1.  Combine all ingredients in a bowl.

2.  Mix well and form into balls with hands.

3.  Place balls on a greased, foil-lined baking sheet and bake at 400 degrees for 13-15 minutes, flipping once.
