What Does a Dietitian Eat?

When someone hears that I’m a dietitian, one of the most common first reactions I get is “Oh my, don’t look at what I’m eating!” Know that as a dietitian, I’m not constantly analyzing your food. It’s more about planning and making sure the meals you’re providing to your family are as healthy but also as tasty as they can be. I want to show you some meals that I make on a weekly basis for my family. I just want to point out that it’s always important to start your day with a good balanced breakfast (I almost always eat eggs in the morning). As far as dinners, which often the leftovers turn into lunches, here’s my weekly rundown:

Monday – Feta, Chicken and Zucchini; all in one pan! (I always have leftovers for lunch after this dish which is why I love to make it first thing during the week.)

Tuesday – Egg Roll in a Bowl (Sub out the sausage for chicken or turkey sausage)

Wednesday – Buffalo-Chicken Stuffed Peppers (I always pair with a green vegetable or side salad)

Thursday – Taco Soup (I’ve made this countless times and it’s delicious every time. I was amazed by how easy, flavorful, and filling it is as well!)

Friday – Salmon Foil Packet (I love this recipe because it’s so simple, and it’s a great one you can cook on the grill or in the oven)
