In all my years practicing as a dietitian, I would say the 2 questions I get asked the most are
"can you just give me a meal plan?" and "what do you eat ?". Well, I am going to answer both of those questions for you. Typically meal plans don't work because what my family likes may be different than what you or your family likes. So what we decided to do at Bodymetrix is ask all of the dietitians to provide a sample meal plan of a weeks worth of dinners. Hopefully this will provide you some ideas with your own meal planning and maybe you will find some new ideas for yourself. I'm up first!!! Just to give you some background, I have 2 children and dinner time is not always the most pleasant time in my house. I'm sure some of you can relate!! I also deal with picky eaters and juggling kid's sports and activities. I like to rely on using the crockpot on busy nights and foil packet meals that are easy to prepare and even quicker to clean up. I hope you enjoy some of my recipes!
Monday - Giant Turkey Meatball Parmesan with steamed broccoli. My husband and I had this over spaghetti squash and I made a side of whole wheat pasta for my kids. P.S. My kids loved this one!!
Tuesday (Taco Tuesday)- Slow Cooker Chicken Black Bean Tacos (I like to use the leftover shredded chicken to top on my salad the next day at work)
Wednesday - Shrimp Cakes, and Broccoli slaw salad (I purchased prepackaged broccoli slaw in the produce section)
Thursday - Lemon Chicken and Asparagus Foil Pack, serve with a side of farro, brown rice, or quinoa (You could also substitute chicken for fish)
Friday - Slow Cooker 3 bean chili and a side salad (this is great on a cool or rainy day, also great when you don't have time at night to cook)
