Quinoa-Berry Breakfast Parfait in a Mason Jar

Serves 1



1/3 cup cooked red quinoa

1/4 tsp. pure vanilla extract

2/3 cup plain low-fat Greek yogurt, divided

1/2 cup mixed fresh or frozen berries

1 Tbsp. chopped toasted nuts

1 tsp. honey




1.    In a small bowl stir together cooked red quinoa and 1/4 teaspoon pure vanilla extract. Set aside.

2.    Place 1/3 cup Greek yogurt in a pint-size mason jar. Add most of the quinoa, followed by fresh or frozen berries. Add remaining yogurt, quinoa and toasted nuts.

3.    Drizzle with honey, cover and refrigerate overnight.
