Traditional sweet potato recipes are often loaded with brown sugar or even marshmallows! Try this savory version for a healthier alternative. Also sweet potatoes are a great source of Vitamin A, Vitamin C and B6, fiber, and potassium. All the more reason to skip on plain potatoes and enjoy this nutrient-packed option.
2 lbs (4 medium) sweet potatoes, peeled and cubed
1 Tbsp butter
3 garlic cloves, crushed
1/2 cup 1% milk
2 Tbsp. light sour cream or plain Greek yogurt
Salt and freshly ground pepper, to taste
1. In a large pot, cover sweet potatoes with salted water. Bring to a boil and cook until tender, or for about 20 minutes. Drain in colander.
2. While sweet potatoes are draining, return the pot to the stove and melt butter over medium heat. Sauté garlic until golden and fragrant.
3. Return potatoes to the pot and add milk and sour cream; mash until smooth and potatoes are creamy. Season with additional salt and pepper to taste.
